I've been working on a few posts that are taking longer than I'd hoped. Rather than waiting a few weeks to post, I thought I'd try a "Mail Bag" post. Many people send roasting and brewing questions to my personal email every week. I do my best to answer those, but I think it would be more beneficial to answer such questions publicly. So, if you have a burning question about roasting or brewing, feel free to send it a comment to this post. I'll pick a few that seem like they may be of interest to many readers and that I feel qualified to answer. If I don't post your question, please don't take it personally; it may be that I don't know the answer, or I may judge it won't interest a large proportion of readers.
